  3. Don’t treat sunflower oil, of any type, as your only fat source. The omega-6/omega-3 balance concern is legitimate and well-supported. Rotate in extra-virgin olive oil, and make sure you’re getting omega-3s from fish, flaxseed, or walnuts elsewhere in your diet.
  4. If cost isn’t a major constraint and you’re optimizing purely for health, extra-virgin olive oil edges out even high-oleic sunflower oil in the clinical comparison above — but for high-heat frying specifically, high-oleic sunflower oil’s stability advantage is a legitimate reason to still choose it over olive oil for that particular job.

My honest prediction: within the next five years, expect “high-oleic” to stop being a premium niche label and start becoming closer to a default for cooking-oriented sunflower oil in many markets, while standard (high-linoleic) sunflower oil increasingly gets positioned specifically for its omega-6 content in contexts where that’s actually desired — food manufacturing, certain baking applications, and diets that are already omega-3 heavy.
